Born and raised in Hawaii, Dish’n Dames feature, Shannon Kennedy, was practically predestined for her role as an executive sushi chef.
Although Shannon had expressed an interest in Japanese cuisine at the start of her culinary career in Tallahassee, Florida, she wasn’t necessarily looking for an opportunity in sushi when the chance to explore that world arose. The second it did, she knew she wasn’t going to pass it up. A graduate of Le Cordon Bleu, Shannon’s first position in 2012 was as head chef and general manager for Jasmine Café & Lounge, an Asian fusion style restaurant. She then moved on to work as a consultant for Kitcho Japanese Restaurant – also in Tallahassee – before making her way to Austin. In Austin, she first served as executive sushi chef at Roll on Sushi Diner before joining the Uchiko family. She now serves as the executive sushi chef for Uchi Austin. |
