Her passion for cooking came early and naturally, embracing the flavors of France, Spain, Africa, and Italy that form the foundation of traditional Cajun/creole fare.
In the South Louisiana, surrounded by that laissez les bon temps rouler community, Pub learned early on that the most important part of a meal is sharing it with those you love. For years, she has been feeding her friends here in Austin – staving off hunger and hangovers – dousing every recipe with lots of love and the perfect amount of spices. She blended her hometown cooking with the Austin food truck culture, and in 2013, Baton Creole first opened its service window. Her menu boasts a delicious array of food that Louisianans know is rare to find in Texas – a perfectly dark roux gumbo, her trademarked- Jambalaya Baton (Jambalaya deep fried and on-a-stick), Creole style Crawfish Etouffee. spicy green bean casserole, Cajun Poutine fries with brie, Crab Boil Potato Salad, and don’t forget the beignet baton! (Don’t worry, vegans and vegetarians, she’s got main courses for you, too!) Running her own kitchen was always Pub’s dream, but that dream has only just begun. This first trailer drove her forward into expansion, catering projects, a second trailer, and even onto television! She has received Austin’s Best Food Trailer from the Austin A-List two years running, and her endless good reviews have a theme of praising the chef’s company just as much as her delicious meal. There is no telling how far this girl with big hair and bigger dreams will go.
