I am not a quitter and I'm never going to be a quitter, so however hard it takes me to get up there, I'm still going to feel good about myself and do as best as I can. Our Dish’n Dames feature this week has had a lifelong passion for all things culinary. Raised in Colorado Springs, Colorado, Lindsay Flagg first discovered her interest as a result of watching Martha Stewart as a child. She was fascinated — and a seed was planted.
After completing her first year of college, Lindsay decided to pursue her passion and launch her career in cooking. She completed her American Culinary Federation Apprenticeship at the Broadmoor Resort in Colorado Springs and then interned at The French Pastry School in Chicago where she spent time working under Chefs Thomas Raquel and Ji Yoon at the two-star Michelin-rated Acadia — honing her skills. In 2015, Lindsay moved to Austin and joined South Congress Hotel as part of its opening team. Leveraging her talent, discipline and leadership skills, she worked her way up to now serve as the executive pastry chef, overseeing the pastry program. Even in her free time, Lindsay is all about food and loves supporting the local bars and restaurants throughout Austin. And when she’s not in her kitchen or out and about, she enjoys outdoor time with her playful pup. |
