As a young girl in South Texas, Jackie Letelier loved being in the kitchen with her mother, aunts and grandmother as they created beautiful meals for the entire family. From her countertop perch, Jackie would soak up the sights, sounds and flavors — mesmerized by the fun of it all.
The latter half of her childhood was spent on her family’s farm in Chile where weekends were filled by long lunches with family and friends. Jackie learned that the secret to easy entertaining was a generous spread of fresh cheeses, meats, home grown vegetables, fruits from the orchard and delicious, homemade preserves. She came to the realization that the best recipes were made from love with ingredients that came straight from the land where they lived. After pursuing a degree in Viticulture from Universidad Catolica de Chile and obtaining a degree in Culinary Arts in Austin, Texas, Jackie pursued professional projects that allowed her to blend community engagement with local food and culture. After working in the food and wine industry in Chile and South Texas, Jackie moved back to Austin in 2010 and launched a small food business, Paté Letelier. This business focused on making connections with local farmers and ranchers to craft small-batch patés, charcuterie, and preserves. It reminded her of the lessons learned back on her family farm in Chile. In 2019, Casero was born of this heartfelt passion for simple food, honest ingredients and abundant hospitality. Jackie was back in her kitchen, once again making her small-batch charcuterie. Through Casero, Jackie creates beautiful trays of carefully selected artisanal cheeses, handmade charcuterie, jams and other local goods delivered to your door and ready to serve to guests. |
