As a young girl living in Guatemala with her grandmother, Enma learned the importance of sharing good food with good people. Grandma Carolina generously provided a home and nutritious meals for some of the missionaries, doctors, and nurses traveling through the city. Watching how much her grandmother enjoyed creating different dishes and cooking for others left a lasting impression and impacted the way Enma envisioned food forever.
It wasn’t until after Enma moved to the United States and several years later while a junior in college that she ultimately realized cooking and being in the kitchen was where she belonged. With a will to learn, Enma began her culinary career washing dishes and worked her way up learning to make dishes from scratch, turning fresh and simple ingredients into creative dishes with new and bold flavors. In 2018 Enma joined Austin Beerworks’ food truck, Can-tina where she found her footing as a line cook and worked her way up to Head Chef in 2021. She has introduced several new menu items and relaunched the brunch menu with new offerings like chilaquiles and churro bites. But beyond creating new dishes, it is the camaraderie she has built with her team and serving guests that Enma most enjoys. Sticking to what her grandma taught her…sharing good food with good people. |
