The thing I want to best known for, would be having a business where we treat all of our employees fairly. Where its a work environment where people want to come into work, they enjoy work. " Our Dish’n Dames feature this week, pastry chef Elise Russ has been passionate about dessert since she was a child, elaborately decorating cookies with piles of icing that had no hopes of ever hardening.
After taking a cake decorating class at the local JoAnn's, she launched her career making custom sweets for her neighbors and keeping her grandfather supplied with biscotti and pizzelles. Her passion led her to Elise pursue a degree in Baking & Pastry Arts from Johnson & Wales University in Providence, Rhode Island. Before settling down in San Antonio where she is now the pastry chef and owner of Clementine, along with her husband John Russ, Elise worked in hotels, restaurants, and bakeries in London, Chicago, Georgia, and Maryland. She is a proud member of the San Antonio chapter of Les Dames d’Escoffier International, and when she’s not whipping up delectable treats at Clementine, she enjoys frosting sugar cookies with her two daughters. |
