Alyx Hardin’s journey toward becoming a sushi chef was an unconventional one. Born and raised in Austin, her first introduction to foodservice was working at Whole Foods as a fishmonger. Her experience in the seafood department, breaking down fish, designing food samples, and creating event menus fostered a love of fish that is the source of her genius today.
Currently, she is the sous chef at Lucky Robot Japanese Kitchen in Austin, Texas. There, her talents are focused mainly in honoring Japanese cuisine, particularly fish and sushi. However, she respects and has a great appreciation for global cuisine and has explored Nikkei — Peruvian ingredients molded by Japanese techniques — as well as other South American flavors to always further develop her kitchen repertoire.
As a sushi chef at Lucky Robot for nearly six years now, she is constantly experimenting with new techniques and ingredients. Alyx’s latest culinary adventures include working with dry-aged fish, plus learning how to bring sustainability to the Austin sushi scene.
